How to Make Latkes
Ingredients:
- 5 potatoes, peeled
- 1 small onion, peeled
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. matzah meal
- 2 eggs
- Oil for frying
Directions:
1. Grate potatoes and onions in food processor or with hand grater.
2. In separate bowl, lightly beat eggs with fork. Quickly pour potato mixture into eggs, working quickly so potatoes don't turn brown. Add salt, pepper and matzah meal. Mix well.
3. Heat oil in frying pan over medium flame. Place latke shapers in pan. Pour batter to fill shapers. Keep unused batter covered so potatoes won't turn brown.
4. Fry for about five minutes or until golden brown. Use wooden knob to lift shaper. Use spatula to flip latkes. Add more oil and continue until batter is finished. Don't forget to reheat oil each time. 5. Dry latkes on plate lined with paper towel. Serve with applesauce or sour cream.
